  • 1 cup castor sugar
  • 1 cup unsweetened coconut flakes
  • 1 tsp baking soda
  • ½ cup unsalted butter (melted)
  • ¼ cup golden syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix rolled oats, flour, sugar, coconut flakes, and baking soda until well combined.
  3. Melt butter and golden syrup together in a small saucepan over low heat.
  4. Pour the melted mixture into the dry ingredients and stir until fully incorporated.
  5. Scoop tablespoons of dough onto prepared baking sheets, leaving space between each scoop.
  6. Bake for 10-12 minutes or until golden brown. Allow to cool on trays before transferring to wire racks.
