  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup creamy peanut butter
  • 1 cup confectioners' sugar
  • 1/4 cup unsalted butter, softened
  • 3 tbsp heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and milk.
  4. Gradually combine dry ingredients with wet ingredients until just mixed. Fold in peanut butter.
  5. Fill each cupcake liner two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with a blend of confectioners' sugar, softened butter, and heavy cream.
