  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • For the Frosting:
  • 8 oz cream cheese (softened)
  • ½ cup butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil until smooth. Add eggs one at a time, then stir in buttermilk, red food coloring, and vanilla.
  4. Gradually combine dry ingredients into the wet mixture until just blended.
  5. Fill liners two-thirds full and bake for 20-22 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with the cream cheese mixture.
