  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tsp vanilla bean paste (or 1 vanilla bean)
  • 2 large eggs (room temperature)
  • 1/4 cup sour cream
  • 2 tbsp granulated sugar (for brûlée topping)

Instructions

  1. Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs with melted butter. Press mixture into each liner.
  3. Beat softened cream cheese until smooth, then add granulated sugar and mix well.
  4. Stir in vanilla bean paste and eggs one at a time.
  5. Mix in sour cream until smooth. Pour filling over crusts in liners.
  6. Bake for 20-25 minutes until centers are set but slightly jiggly. Cool completely before refrigerating for at least two hours.
  7. Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
