  • 1 cup heavy cream

  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, beat the eggs; add milk and cooled coffee, mixing well. Combine wet and dry ingredients gently until just mixed.
  4. Pour the batter into liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  5. While cupcakes cool, whip heavy cream until stiff peaks form. Mix mascarpone cheese until smooth; gently fold in whipped cream.
  6. Frost cooled cupcakes with the mascarpone mixture and dust with cocoa before serving.
