  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1/4 cup espresso or strong coffee (cooled)
  • 1/2 cup mascarpone cheese
  • Cocoa powder (for dusting)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour, baking powder, cocoa powder, and salt. Gradually combine this mixture with the wet ingredients until just mixed.
  4. Scoop the dough into muffin cups and press down slightly to create space for filling.
  5. Bake for 12-15 minutes until golden around the edges. Let them cool completely on a wire rack.
  6. In a separate bowl, mix mascarpone cheese with cooled espresso until smooth. Fill each cooled cookie cup with this mixture.
  7. Dust with cocoa powder and top with chocolate shavings if desired before serving.
