  • 1/4 cup vegetable oil

  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix sugar and vegetable oil until combined. Add eggs one at a time, then stir in food coloring and vanilla extract.
  4. Gradually fold dry ingredients into wet ingredients until just mixed.
  5. Pour batter into the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
  6. Once cooled slightly, roll the cake in powdered sugar-dusted parchment paper. Allow it to cool completely before unrolling, filling with cream cheese mixture, and re-rolling.
