  • 1/2 cup whole milk (or almond milk)
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter (melted and cooled)
  • For the Frosting:
  • 1 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsalted butter (softened)
  • 2 tbsp milk or cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, sugar, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla until well blended.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fill cupcake liners two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool before frosting.
