Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, oil, milk or cream, and coffee powder until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting with cream cheese frosting infused with coffee.
