  • 1 tsp baking soda

  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil (or melted butter)
  • 2 tsp vanilla extract
  • 1 cup brewed strong coffee (cooled)
  • 1 cup sliced almonds (toasted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, buttermilk, oil, vanilla extract, and brewed coffee. Gradually combine this wet mixture with the dry ingredients until smooth.
  4. Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let cool in pans for ten minutes before transferring to wire racks.
  5. For the frosting, beat softened butter with powdered sugar and cocoa powder; gradually add brewed coffee until desired consistency is reached.
  6. Once cooled, layer one cake on a serving plate with frosting and toasted almonds. Add the second layer on top and frost the entire cake.
