Simnel cake is a traditional British dessert that perfectly marries rich fruitcake and sweet marzipan, making it a festive centerpiece for Easter celebrations.   • 1 cup unsalted butter, room temperature
  • 1 cup caster sugar
  • 4 large eggs
  • 2 cups self-raising flour
  • 1 cup mixed dried fruits (currants, sultanas)
  • 2 tsp mixed spice powder
  • 8 oz almond paste

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8-inch round cake tin.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Sift in the flour and mixed spice powder; fold gently until just combined.
  5. Stir in the dried fruits.
  6. Pour half of the batter into the prepared tin. Roll out half of the almond paste and place it on top before adding the remaining batter.
  7. Bake for about 1 hour or until a skewer inserted comes out clean. Let cool completely before decorating with more almond paste.
