Hot Cocoa Cookies are a delightful winter treat that combines the rich flavors of hot cocoa with soft, chewy cookie goodness.   • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy (about 2 minutes).
  4. Add egg and vanilla to the butter mixture; beat until smooth.
  5. Gradually mix in dry ingredients until just combined.
  6. Fold in chocolate chips and mini marshmallows gently.
  7. Scoop tablespoon-sized mounds onto prepared sheets about two inches apart.
  8. Bake for 10-12 minutes until edges are firm but centers remain soft. Cool on wire racks before serving.
