  • 1/2 cup unsweetened cocoa powder

  • 1 cup granulated sugar
  • 2 large eggs

  • 1/4 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 cup softened butter
  • 2 cups powdered sugar
  • 1/2 cup marshmallow fluff
  • 2 tbsp cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before preparing the frosting by beating together butter, powdered sugar, marshmallow fluff, and cocoa powder until fluffy.
  7. Frost cooled cupcakes generously and add mini marshmallows if desired.
