Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. In another bowl, beat eggs, milk, oil, vanilla extract, and orange zest until well mixed.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Divide the batter among cupcake liners, filling them about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before frosting.
