  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup whole milk
  • 2 tsp vanilla extract
  • 1 cup toffee bits
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cream softened butter in another bowl until smooth. Gradually add sugar and beat until light and fluffy.
  4. Mix in eggs one at a time, then add milk and vanilla until smooth.
  5. Gradually incorporate dry ingredients into the wet mixture, being careful not to overmix.
  6. Gently fold in toffee bits (and chocolate chips if using).
  7. Spoon batter into muffin tins about two-thirds full and bake for 18-20 minutes or until they spring back when touched.
