  • ½ cup canned pineapple chunks (finely chopped)
  • ½ cup coconut flakes (unsweetened)
  • 1 tsp vanilla extract
  • 1 cup buttercream frosting (made from butter, powdered sugar, coconut milk)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each. Then mix in coconut milk and pineapple juice.
  4. Fold in the dry ingredients until just combined. Gently mix in chopped pineapple and coconut flakes.
  5. Fill cupcake liners about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
