  • 8 oz mascarpone cheese (fresh)
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a bundt pan with nonstick spray.
  2. In a bowl, whisk together cake flour, baking powder, and salt. Set aside.
  3. In another bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually combine the dry ingredients with the wet mixture, alternating with cooled espresso.
  5. Pour batter into the bundt pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack. Whip mascarpone cheese with cocoa powder until smooth and layer between sliced cake.
