  • 1/2 cup strong brewed coffee

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 2 tbsp coffee or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cupcake tin with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sugar until combined.
  3. In a separate bowl, mix eggs, milk, vegetable oil, brewed coffee, and vanilla until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before frosting with your mocha frosting.
