  • ¾ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup fresh raspberries
  • 2 cups powdered sugar
  • 8 oz cream cheese, softened
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round baking pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by milk until well combined.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in half of the raspberries and pour batter into prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting with cream cheese frosting and topping with remaining raspberries.
