  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • For the Frosting
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 3 tbsp heavy cream
  • 1/2 tsp peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until combined.
  3. In another bowl, mix eggs, milk, vegetable oil, vanilla extract, and peppermint extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. While cooling, beat butter until creamy; gradually add powdered sugar, cream, and peppermint extract until smooth.
  7. Once cooled completely, frost cupcakes generously with the peppermint frosting.
