  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 1 cup buttermilk
  • ¾ cup vegetable oil (or melted butter)
  • ½ cup bourbon (or whiskey)
  • 1 cup chopped pecans (reserve some for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, buttermilk, vegetable oil, and bourbon until smooth.
  4. Gradually combine wet and dry ingredients while stirring gently until well incorporated.
  5. Fold in half the chopped pecans. Pour batter into prepared pans.
  6. Bake for 30–35 minutes or until a toothpick comes out clean. Cool in pans before transferring to racks.
