  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 stick (½ cup) softened butter
  • 4 cups confectioners’ sugar
  • ½ cup creamy or crunchy peanut butter
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Combine wet ingredients with dry ingredients; mix until just combined.
  5. Fill each liner about three-quarters full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with a mixture of softened butter, confectioners’ sugar, peanut butter, and milk. Top with crushed Butterfinger pieces.
