  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 cup white chocolate chips for dipping

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy. Add eggs one at a time along with peppermint extract.
  4. Gradually mix in the dry ingredients until just combined. Fold in half of the white chocolate chips if desired.
  5. Scoop dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until edges are set but centers remain soft.
  6. Once cooled, melt remaining white chocolate chips and dip half of each cookie into the melted chocolate. Allow to set on cooling racks.
