  • 1 tsp baking powder

  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup shredded carrots (freshly grated)
  • 8 oz cream cheese (softened)
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, mix together vegetable oil and eggs until blended; stir in shredded carrots.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. In a separate bowl, beat softened cream cheese with sour cream until smooth; add an egg and mix well.
  6. Pour half of the carrot cake batter into the prepared pan. Spoon dollops of cheesecake mixture over it, then top with remaining carrot batter. Use a knife to swirl gently for effect.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
