  • 1 tsp baking powder

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/4 cup vegetable oil (or melted butter)
  • 1/2 cup creamy peanut butter
  • For the Frosting: 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 cup creamy peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sugar until well combined.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla extract until smooth. Combine wet and dry ingredients gently.
  4. Fill each liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  5. For the frosting, beat softened butter and powdered sugar until fluffy. Mix in peanut butter until smooth.
  6. Once the cupcakes are cool, fill each with frosting using a piping bag or spoon.
