  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 3 large eggs, at room temperature
  • 1 cup full-fat sour cream
  • 1 tsp pure vanilla extract
  • 2 cups fresh raspberries

Instructions

  2. 2. Combine crushed graham crackers, melted butter, and ¼ cup sugar; press into the bottom of the pan.
  3. 3. Beat cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla until fully combined.
  4. 4. In a small saucepan over low heat, warm raspberries with the remaining sugar until they break down into sauce; let cool slightly.
  5. 5. Pour cheesecake batter into the crust; dollop raspberry sauce on top and swirl gently with a knife.
