  • 4 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • 4 large eggs (2 yolks, 2 whites)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare ramekins by buttering and dusting them with sugar.
  2. Melt dark chocolate and unsalted butter together in a double boiler or microwave until smooth.
  3. In a bowl, whisk egg yolks and granulated sugar until pale; fold in melted chocolate mixture gently.
  4. In a clean bowl, whip egg whites with a pinch of salt until stiff peaks form.
  5. Carefully fold one-third of the whipped egg whites into the chocolate mixture, then gradually add the remaining whites until combined.
  6. Spoon the mixture into prepared ramekins and bake for 12-15 minutes until puffed and slightly wobbly in the center.
