  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, combine red velvet cake mix, sour cream, eggs, and vanilla; mix until smooth.
  3. Pour half of the batter into the prepared pan and bake for 25 minutes until a toothpick comes out clean.
  4. Cool completely before removing from the pan.
  5. Beat together cream cheese and sugar until smooth; add eggs one at a time.
  6. Pour cream cheese filling over cooled cake layer and bake for about an hour until slightly jiggly in the center.
  7. Let cool in the oven with door ajar for an hour; then chill in the fridge for at least 4 hours.
  8. Top with cream cheese frosting just before serving.
