  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • ½ cup whole milk
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 candy canes, crushed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour and baking powder; set aside.
  3. In a large bowl, beat together the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and peppermint extracts.
  5. Gradually add the dry ingredients alternating with milk until just combined—do not overmix!
  6. Fill cupcake liners about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  7. While cooling, prepare the frosting by mixing cream cheese, butter, and powdered sugar until smooth.
  8. Frost cooled cupcakes generously and sprinkle with crushed candy canes.
