  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • ½ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • ½ cup marshmallow fluff
  • ½ cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt; set aside.
  3. In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually add dry ingredients to the wet mixture, mixing on low speed until well combined.
  5. Scoop rounded tablespoons of dough onto prepared sheets about two inches apart. Bake for approximately 10 minutes until slightly domed.
  6. While cookies cool, prepare the filling by mixing softened butter, marshmallow fluff, and powdered sugar until smooth.
  7. Spread or pipe filling onto half of the cooled cookies and top with another cookie.
