  • 2 large eggs (room temperature)
  • ½ cup whole milk (or almond/oat milk)
  • ¾ cup watermelon puree
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (melted)
  • 1 cup buttercream frosting
  • Green food coloring (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs and melted butter; add milk and watermelon puree. Stir in vanilla extract.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with buttercream tinted green.
