  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.

  3. In a bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. In another bowl, whisk flour and baking powder together. Gradually mix this into the wet ingredients until just combined.
  5. Spoon batter over the pineapple slices in the muffin tin, filling about two-thirds full.
  6. Bake for 20-25 minutes or until golden brown; let cool for five minutes before flipping onto a wire rack.
