Instructions

  1. Grease an 8-inch round cake pan or line it with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of the pan to create a crust.
  3. In another bowl, mix key lime juice and sweetened condensed milk until smooth. Whip heavy cream until stiff peaks form, then fold into the key lime mixture.
  4. Pour half of the filling over the crust and freeze for about an hour until slightly firm.
  5. Spread the remaining filling over the first layer; freeze for at least four hours or until fully set.
  6. Carefully remove from the pan, garnish with fresh lime zest, slice, and serve immediately.
