  • 1 cup fresh or dried cranberries (chopped if dried)
  • ½ cup milk

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in orange zest.
  5. Gradually alternate adding the dry mixture and milk to the butter mixture until just combined. Fold in cranberries gently.
  6. Fill cupcake liners about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool on a rack before frosting or serving.
