  • 8 oz cream cheese (for frosting)
  • ½ cup butter (softened)
  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and sugar.
  3. In another bowl, mix vegetable oil, buttermilk, eggs, and red food coloring until smooth.
  4. Combine the wet and dry ingredients gently until just mixed; avoid overmixing.
  5. Fill cupcake liners two-thirds full and bake for 20–25 minutes or until a toothpick comes out clean.
  6. Cool in the pan for five minutes before transferring to a wire rack. Frost with cream cheese frosting once completely cool.
