  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1/2 cup creamy peanut butter
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, granulated sugar, and brown sugar.
  3. In another bowl, beat eggs and mix in milk, vegetable oil, and vanilla until smooth.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
  7. To make frosting, beat softened butter until fluffy; add powdered sugar, peanut butter, and heavy cream until smooth. Frost cooled cupcakes as desired.
