Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line with parchment paper.

  3. In another bowl, beat eggs and vanilla. Gradually whisk in olive oil until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined; do not overmix.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes in the pan before transferring to a wire rack. Serve plain or with a drizzle of olive oil and a sprinkle of sea salt.
