  • ¾ cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk)
  • ½ cup whole milk
  • 1 cup powdered sugar
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in chocolate chips.
  4. Fill cupcake liners about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  5. For the cookie dough filling, cream together butter and sugars, then mix in heat-treated flour and milk until desired consistency is reached; fold in chocolate chips.
  6. Once cupcakes are cool, scoop out the centers and fill them with cookie dough filling. Top with cream cheese frosting.
